All cakes are baked individually by hand. Decorations are also
handmade for each cake, and are entirely edible. Only natural food
colourings are used. Ingredients are freshly obtained for each
cake.
We use free range eggs and good quality English butter. Madeira cakes
and butter cream fillings contain pure vanilla extract.
All chocolate used in cakes and decorations is milk, dark or white
Belgian.
We bake gluten free and dairy free cakes and are happy to alter
recipes to suit individual tastes.
Fruit cakes are allowed to mature prior to covering with marzipan and
icing. In these we include fresh oranges and fresh lemons, and
natural undyed cherries. We crush and roast whole almonds before
baking in fruit cakes.
Dried fruits are soaked in brandy prior to baking unless an alcohol
free fruit cake is requested.
